Buttermilk Pancake Mix

Breakfast shortcuts like pancake mix save us so many mornings. I have a couple store-bought brands that we like, but they could be a lot better. We all know that no pancake beats a homemade one, but I'm writing to tell you that my pancake mix recipe comes close.

And, while I prefer to cook fresh buttermilk pancakes from scratch on leisurely weekend mornings, I adore this pancake mix every other day of the week! The pancakes are light and fluffy with a delicious taste.

Why you'll adore this homemade buttermilk pancake mix

When you consider how long it takes to mix together a few dry ingredients, homemade pancake mix isn't a great time saver, but I've been amazed by how much time it seems like I'm saving. Making pancakes from this mix is a lot easier and faster, and I make pancakes much more frequently!

This pancake mix comprises flour, sugar, baking powder, soda, and salt. Using powdered buttermilk adds a lot of homemade taste to the cooked pancakes, and combining it with powdered egg substitutes makes whipping up a batch of pancakes much easier.

Simply whisk together the pancake mix and some water to make pancakes, or add melted butter or oil and vanilla extract for extra flavor.

The mix's ingredients

So let's make some pancake batter! Here's what you'll need (the recipe follows):

  • All-purpose flour
  • buttermilk powder
  • Powdered egg replacer (optional; I use Bob's Red Mill brand)
  • Granulated sugar
  • baking powder
  • Baking soda
  • Salt

How to make a batch of pancakes with this mix

One batch of homemade pancake mix yields 6 batches of 10 little 4-inch pancakes. To prepare a batch of pancakes, you'll need the following ingredients in addition to the pancake mix:

  • Water
  • Egg (if not using powdered egg replacer)
  • Butter or vegetable oil (optional)
  • Vanilla extract (optional)
To create the pancakes, just mix up all of the ingredients in a bowl and fry in a skillet over medium heat for a few minutes on each side until brown. Then relax and enjoy!

How to Store Homemade Pancake Mix

Homemade buttermilk pancake mix can be stored in an airtight container or bag in your pantry for about a month or in the fridge for up to 6 months. The buttermilk powder in this recipe will keep the longest in the fridge.

Tips for making pancakes

Now that you've prepared your own pancake mix, here are some more suggestions for producing the tastiest pancakes at home:

  • Whisk the wet and dry ingredients together just until blended, leaving no flour streaks. It's alright if the batter is a touch of lumpy. This results in a more delicate pancake.
  • For pancakes, I like to use a cast iron skillet since it produces a nice golden finish. Any heavy-bottomed pan with straight edges, such as a griddle, will also work.
  • You may grease your pan with either butter or neutral oil (vegetable oil), however, I like the flavor of butter.
  • Pancakes are ready to be flipped since the surface bubbles have The edges are dry and popped.
  • Place pancakes in a single layer on a sheet pan in a 200°F oven to keep them warm and crisp while you work.
  • Pancakes freeze really well! In a ziplock bag or plastic container, place a layer of parchment paper or wax paper between each pancake. Keep for up to a month. Toast in the toaster.
